Cuve close (Charmat method, tank method) produces sparkling wine through secondary fermentation in large pressurized tanks rather than individual bottles. It's faster and more economical than traditional method, preserving primary fruit character. Used for Prosecco, Lambrusco, and value sparkling wines. Produces lighter, fruitier bubbles.
