Total Acidity

The total concentration of acids in wine.
Full Definition
Total acidity (TA) measures the combined concentration of all acids in wine, expressed in grams per liter. It differs from pH, which measures acid strength. Wine typically ranges from 5-8 g/L TA. High TA wines taste tart; low TA wines may taste flat. Both TA and pH matter for balance assessment.
