Cedar describes an aromatic, pencil-shaving character common in Bordeaux, Cabernet Sauvignon, and wines aged in quality oak. It's part of the 'cigar box' aromatic complex that develops with age. Cedar notes are generally positive, suggesting complexity and quality aging. The scent comes from cedrol compounds.
