Full Definition

Anaerobic describes processes occurring without oxygen. Alcoholic fermentation is anaerobic - yeast converts sugar to alcohol in the absence of oxygen. Carbonic maceration involves anaerobic intracellular fermentation. Reductive winemaking minimizes oxygen exposure. Anaerobic conditions prevent oxidation and acetobacter growth.
