Midpalate, a surge of saline, yeasty depth arrives alongside hay and cracked white pepper, the kind of textural complexity that paragneiss terroir seems almost engineered to produce. The finish is long and bone-dry, with a persistent salinity and that signature white pepper trailing quietly behind.
