This 2022 Shiraz Kin Birdsong represents a contemporary approach to Barossa viticulture, eschewing the region's typical fruit-forward opulence for a more restrained, savory expression. Wild fermentation in concrete tulip vessels has yielded a nose dominated by cured charcuterie and toasted spice notes, underpinned by dark chocolate and blackberry fruit. The palate delivers a wine still in its infancy, with solid grip and astringent tannins from whole bunch inclusion currently masking the underlying fruit. While the tension creates intrigue, the wine's texture remains compressed at this stage. This requires a minimum of two years in bottle to allow the tannins to polymerize and integrate with the wine's core.
