From well-ventilated loess terraces over calcareous, iron-rich Danubian gravels, this Spiegel has a nose of fresh yeast, woodland moss and a gentle nudge of white pepper. Light-footed and almost weightless on entry, it opens up with an airy, smooth texture that feels closer to silk than structure. White pepper pulses through from start to finish, not as a garnish but as the wine's defining character. There's a buoyancy here, a kind of upward lift, that keeps it feeling fresh and alive without sacrificing depth. Bone-dry and thoroughly expressive.
