Candied lemon peel, barley sugar, and dried apricot, with a trace of blossom honey threading through. The sweetness is genuine and generous, yet the acidity is almost startlingly firm, keeping it lifted and precise rather than heavy. Tender, gorgeous, and remarkably composed.
