Sourced from Schätzel's three top parcels of Hipping on the Red Slope, grown from a family-owned Silvaner clone, this was formerly labeled Niersteiner before village names were dropped from the Deutscher Landwein category, 'Steiner' is the workaround. Green apple, saline yeast, and lemon peel on the nose, clean and inviting. On the palate it's feather-light, with yeast and citrus pith providing gentle grip rather than weight, and a slight haziness that softens what might otherwise be an unrelenting freshness. Bone-dry through and through, with a yeasty finish that lingers quietly but leaves a real impression.
