Taut and focused, with the Chavot chalk soils stamping their character clearly from the first sniff, lemon curd, white flowers, and a stony, almost flinty edge. Fine bubbles carry a lean, bracing acidity through the mid-palate, where green apple and a briny oyster-shell note add depth. Everything is wound tight right now, and this needs another two years at minimum to open up and show what it's truly capable of.
