Fuchs takes its name from 'Fuchsloch,' an old designation for one of Schätzel's Hipping parcels. This 2019 spent three years under flor in barrel, emerging slightly hazy and golden, with a faint reductive edge that weaves seamlessly into an intense nose of Amalfi lemon and briny, yeasty depth. On the palate it's softened and mellow, yet Riesling's backbone keeps everything honest, the acidity is present, structural, quietly insistent. Citrus, salt, and leal yeastiness settle into something understated but genuinely convincing, the texture silky without being heavy. Bone-dry and remarkably composed, it drinks less like a statement wine than a salve.
