Old-vine Pajè has a different personality than its sibling, deeper, meatier, with a savory, almost ferrous undercurrent that sets it apart. Dried cherry, crushed violet, anise and a thread of incense. The tannins are firmly knit and not yet giving ground, which argues for patience. Give it at least five years before pulling a cork.
