Sweet-tart citrus dominates from the first sip, lemon curd and fresh lime with a juicy, almost pulpy fruit presence that feels surprisingly substantial given the wine's featherlight alcohol. The Hipping's stony character comes through on the finish, which lingers with a mineral tingle that outlasts the wine's apparent simplicity. Acid and residual sugar are still finding their footing, but the raw material is clearly there. Give it a few years in bottle for the pieces to settle into something more harmonious and complete.
