Sourced from individually sorted shriveled berries culled from the Beerenauslese harvest, this TBA is a study in contrasts, honeyed and opulent, yet startlingly alive. Peach conserve, beeswax and amber flow into a vein of sharp, fresh lemon that cuts right through the sweetness. Crystallized ginger and a snap of white pepper add an invigorating savory edge, while a streak of saline bitterness keeps the whole thing grounded. The finish is long, vibrant, and seemingly without end.
