Tightly wound and stony, this non-dosé Blanc de Blancs from La Fosse vineyard opens reluctantly, chalk dust, green apple, and white tea at first, with something deeper coiled underneath. Razor acidity drives the palate, pulling almond paste and citrus peel through a long, austere finish. The concentration here is serious, but patience is required. Give it another two years before pulling the cork.
