The BTG list defines the practical ceiling of most servers' wine knowledge, they sell what they can talk about with confidence. A bloated, unfocused BTG list creates anxiety at the table and default orders ("I'll have whatever the house Cab is"). A well-constructed BTG list gives servers a genuine narrative: this is what we pour and why, and here is what makes each selection worth your attention.

Table average is the metric most directly affected by BTG program quality. A table of four dining for 90 minutes may each consume two to three glasses. At a $14 entry pour versus a $20 mid-tier pour, that is a check impact of $48 to $72 in wine revenue on that table alone. How Many Selections Is Right?

Research on choice overload in consumer behavior (most influentially Barry Schwartz's work on the "paradox of choice") consistently finds that beyond a certain number of options, additional choices do not increase satisfaction. They increase anxiety, decision paralysis, and the tendency to default to familiar brands. For wine, the practical threshold for table-service environments is well-established through operational experience: 8 to 12 BTG selections is the sweet spot for most full-service restaurants.

Casual dining can operate with 6 to 8 selections. Fine dining can extend to 12 to 16, particularly if flights or half-pours are offered. Above 16 to 20 selections, turnover problems multiply, you cannot move enough volume of each selection to keep wines fresh, preservation costs climb, and staff cannot maintain genuine knowledge of the full list.

The specific number should be calibrated to cover count and average daily sales velocity. A restaurant that turns 80 covers on a weeknight and 150 on weekends can sustain 12 BTG selections with proper rotation. Category Balance

A functioning BTG list allocates selections across the major categories guests expect while leaving room for the program's specific identity.

Reflecting Program Identity

The BTG list should be readable as a statement of the program's curatorial point of view. A list of twelve by-the-glass selections that are all from California tells a story. So does a list that is exclusively European. Neither is inherently wrong, but a list that is twelve unrelated, commodity-driven selections from eight countries with no internal logic tells no story at all, and that incoherence is felt by guests even when they cannot name it.

Choose BTG selections that can be connected to each other through a narrative the service team can articulate. The narrative can be regional, varietal, producer-driven, or conceptual ("we pour wines from small, family-owned producers only"). The specific content matters less than the coherence.

Pro Tip: Build your BTG list from the inside out. Start with two or three selections you believe in deeply and that your team can talk about with genuine enthusiasm. Build the surrounding selections to complement and contrast with those anchors. A list built around real conviction always outperforms a list assembled to fill category slots.

The Economics of a Poured Glass

Wine program profitability is determined by the gap between what a wine costs you and what you sell it for, calibrated against actual yield. The BTG pour is where this math is most exposed, and most often miscalculated.

The Core Yield Math

A standard 750ml bottle contains 25.4 fluid ounces. Industry standard pour sizes are:

  • 5 oz (standard): 5.08 pours per bottle: round to 5 pours
  • 6 oz (generous): 4.23 pours per bottle: round to 4 pours

These theoretical yields assume perfect pours. In practice, yield is reduced by:

  • Over-pouring: The most common and most expensive yield killer. A server who consistently pours 5.5 oz instead of 5 oz is losing a full glass every 9 pours, approximately one glass per 1.5 bottles opened. At a $15 selling price, that is $10 lost per bottle compared to perfect-pour yield.
  • Spillage: Minimal with proper equipment and training, budget 0.25 to 0.5 oz per bottle for spillage and residual bottle waste.
  • Tasting pours and comped glasses: Track these separately as controllable expenses.
  • Oxidized pour pull: If a bottle is pulled because wine has oxidized past acceptable quality, the remaining pours in that bottle are pure loss. This is the hardest yield killer to account for in advance, which is why preservation systems (covered in Section 4) are not a luxury but an economic necessity.

A realistic working yield for 5 oz pours is 4.5 to 4.75 pours per bottle once over-pouring and residual loss are accounted for. Conservative programs planning for yield use 4.5.

The Pour Cost Formula

Pour cost percentage is the fundamental metric for evaluating BTG pricing:

Pour Cost % = (Bottle Cost ÷ Total Revenue from Bottle) × 100

Or equivalently, for a single glass:

Pour Cost % = (Cost per Pour ÷ Selling Price per Pour) × 100

To find cost per pour: Cost per Pour = Bottle Cost ÷ Number of Pours

To find the selling price required to hit a target pour cost: Required Selling Price = Cost per Pour ÷ Target Pour Cost %

Worked Examples

Example 1: Entry-tier white wine

  • Bottle cost: $10.00
  • Pour size: 5 oz

At $10/glass this wine runs a 22.2% pour cost, healthy. At $9/glass it runs 24.7%, acceptable. At $8/glass it runs 27.8%, marginally acceptable. Below $8 you are in menu value territory but margin is thinning.

Example 2: Mid-tier red

  • Bottle cost: $20.00
  • Pour size: 5 oz
  • Working yield: 4.5 pours
  • Cost per pour: $20.00 ÷ 4.5 = $4.44
  • Target pour cost: 24%
  • Required selling price: $4.44 ÷ 0.24 = $18.50 → price at $18 or $19

Example 3: Premium pour at 6 oz

  • Bottle cost: $40.00
  • Pour size: 6 oz
  • Working yield: 4 pours (6 oz pours allow less cushion for over-pour)
  • Cost per pour: $40.00 ÷ 4 = $10.00
  • Target pour cost: 22%
  • Required selling price: $10.00 ÷ 0.22 = $45.45 → price at $46 or $48

Note that moving from a 5 oz to a 6 oz pour on a $40 bottle reduces yield from 4.5 to 4 pours, increasing cost per pour from $8.89 to $10.00, a $1.11 increase. On a premium pour, this is manageable. On an entry-tier pour, it is the difference between a profitable glass and a break-even one.

The Over-Pour Tax

This is worth calculating explicitly for every beverage director. If your program pours 100 BTG glasses per night on average, and 40% of those are over-poured by 0.5 oz:

  • Over-poured volume per night: 40 pours × 0.5 oz = 20 oz = approximately 0.8 bottles per night (20 oz ÷ 25.4 oz)
  • At an average BTG bottle cost of $18 (about $0.71 per oz), that is roughly $14 of product given away free every night
  • Annualized at 300 operating days: around $4,250 in unrecovered cost

Over-pour is a solvable problem. Jigger-pour training, regular line audits, marked glassware lines, and management spot-checking at service dramatically reduce over-pour variance. The return on investment for pour training is immediate.

Pro Tip: Audit your BTG pour sizes during a live service once a quarter, not by counting pours after the fact, but by weighing a filled glass immediately after it is poured before it reaches the guest. A 5 oz pour of wine (specific gravity roughly 0.99, close to water) should weigh about 146–148 grams. Any pour over about 160 grams is a 0.5+ oz over-pour. This is the fastest way to identify habitual over-pourers on your floor team.

Oxidation, Quality Control, and Preservation Systems

Oxygen is the enemy of BTG profitability. Once a bottle is opened and the wine is exposed to air, the clock starts. The revenue you can extract from that bottle is now in direct competition with time and chemistry.

These windows assume proper storage: re-sealed with a tight stopper, refrigerated (all wines, including reds, slow refrigeration dramatically extends life compared to ambient storage), and away from agitation.

The standard that should govern your BTG program is this: if you would not pour a glass of it yourself, it does not go to a guest. The cost of serving a degraded glass (in the complaint, the free replacement, and the lasting impression on the guest) exceeds the cost of pulling the bottle.

Preservation Systems

Coravin

The Coravin system inserts a thin needle through the natural cork, allowing wine to be poured without removing the cork. Argon gas is injected to replace withdrawn wine, preventing oxygen contact. The cork reseals when the needle is withdrawn.

  • Best for: Premium pours with high bottle cost, wines ordered infrequently, cellar selections available by the glass
  • Investment: $300–$700 per unit depending on model
  • Ongoing cost: Argon capsules at approximately $10–$15 per capsule; each capsule yields 15–25 pours depending on pour size
  • Per-pour argon cost: approximately $0.50–$0.80, add to cost model
  • Limitation: The classic Timeless needle system works only with natural corks and is ineffective with screwcaps or synthetic closures, and it does not preserve sparkling wine. Enomatic / Wine-on-Tap Preservation Dispensing

Multi-bottle preservation and dispensing systems that store wines under inert gas (argon or nitrogen) while enabling precise measured pours. Units hold 4, 8, or 16 bottles and can maintain wine quality for 3 to 4 weeks once opened.

  • Best for: High-volume BTG programs, bar programs where self-service or server efficiency is a priority, operations with 15+ BTG selections
  • Investment: $3,000–$8,000 per 8-bottle unit; significant capital cost
  • Operational advantage: Near-elimination of open-bottle oxidation loss; consistent pour sizes; temperature control built in
  • Best known brands: Enomatic (Italian), WineKeeper, Vinotemp

Nitrogen Blanket Systems

Manual inert gas systems (cans of nitrogen or argon/nitrogen blend, e.g., Private Preserve) sprayed into an open bottle before re-corking. Low-tech and inexpensive.

  • Best for: Low-volume programs, backup preservation, secondary bottles opened for tasting pours
  • Investment: $10–$20 per can; each can yields 80–120 uses
  • Effectiveness: Extends open bottle life by 1–3 additional days compared to no preservation; less effective than Coravin or Enomatic for true long-term preservation

VacuVin

Rubber stoppers and a hand pump used to remove air from open bottles, creating a partial vacuum.

  • Best for: White and lighter reds at entry tier when speed and cost are priorities
  • Investment: Under $20 for a basic kit
  • Limitation: Vacuum is never total; residual oxygen remains; effective window extension is modest (1–2 days). Not suitable for sparkling wines, removing CO₂ is irreversible.
  • Not recommended as primary preservation for premium selections

Matching System to Operation

The investment decision should be driven by average bottle cost on the BTG list, volume of bottles opened nightly, and the revenue at risk from oxidation loss.

A program with a $25 average BTG bottle cost opening 8 bottles per night has $200 of nightly inventory at oxidation risk. If 20% of that is lost to oxidation annually (a conservative estimate for a program with no preservation), that is $40/night × 300 days = $12,000 per year in pure loss: before considering the guest experience cost of serving degraded wine. An Enomatic system at $5,000 capital cost pays back in under five months.

Pro Tip: Every BTG pour on a Coravin or Enomatic system should carry a visible "preserved by argon" or "poured by the glass fresh" note, either on the menu or as a server talking point. Guests who understand that a $38 glass of Barolo is poured under argon gas without opening the bottle find the premium completely justified. The preservation story is itself a sales tool.

Rotation and Freshness Management

A BTG program without a rotation system is a program that will eventually serve bad wine. Not occasionally, not as an exception, as a structural inevitability. Freshness management is not a quality aspiration; it is a revenue protection protocol.

Building Rotation Into the Program

Rotation begins at list construction. Every BTG selection should have an expected weekly consumption rate based on historical sales data. If a selection is selling fewer than one bottle every three days, it is not moving fast enough to stay fresh without preservation, either the price is wrong, the selection is mismatched to the guest profile, or the service team is not selling it effectively.

A practical rotation framework:

  • Tier 1 (high-velocity): Selections selling 1+ bottles per day. Minimal preservation concern; focus on over-pour control.
  • Tier 2 (moderate velocity): Selections selling 3–5 bottles per week. Use nitrogen blanket or VacuVin; monitor closely; pull or price-promote if velocity drops.
  • Tier 3 (low velocity): Selections selling fewer than 2 bottles per week. Require Coravin or Enomatic; without preservation these selections have no place on a BTG list.

Weekly or biweekly BTG rotations on one or two selections keep the program dynamic, give servers something new to discuss, and allow the program to respond to seasonal shifts in guest preference.

Tracking Open Bottle Age

Every open bottle should be dated when opened. The simplest system is a chalk marker on the bottle or a dated masking tape label applied when the first pour is drawn. The date tells any server or manager at a glance how long the bottle has been open.

More sophisticated operations use a sheet or tablet-based log at the wine station: bottle name, date opened, number of pours remaining, preservation method used. This log takes 30 seconds per bottle to maintain and creates accountability. Without it, a bottle opened on Tuesday can quietly make it to Friday with no one tracking its age.

Training Staff to Detect Quality Issues

The front-of-house team is the last quality checkpoint before wine reaches a guest. Servers and sommeliers should be trained to identify:

  • Browning in whites or reds: Early sign of excessive oxidation; in a white wine, color should be pale gold to light amber at most; obvious browning indicates degradation

First rule out intentional spritz, though: a light prickle is a normal stylistic trait in Vinho Verde, Muscadet sur lie, and some young Gamay, so judge against how the wine is meant to show

Handling Wine That Is Past Its Prime

When a bottle is pulled for quality, a decision must be made about the remaining pours. Options:

  1. Staff consumption: Staff drink at the end of shift. This is the most common disposition and appropriate for wine that is past service quality but not spoiled. It builds team knowledge and morale.
  2. Culinary use: Wine passed for service can often be used in reductions, pan sauces, braising liquids. Coordinate with the kitchen, this creates value from what would otherwise be a write-off.
  3. Write-off and discard: For wine that is genuinely faulty, corked, acetic, or refermented, discard immediately. Do not use in food production.

Document pulled bottles as a separate line item in beverage cost tracking. This creates a visible data trail that shows what preservation investment is saving, and it creates accountability for quality decisions at the bottle level.

Pro Tip: Run a "freshness challenge" at your monthly floor meeting: open two glasses of the same BTG selection side by side, one from a freshly opened bottle, one from a bottle opened 4 days ago under nitrogen. Let the team taste both without telling them which is which. The exercise makes oxidation visceral and concrete in a way no amount of verbal explanation achieves. After that tasting, your team will never pass a degraded glass without noticing.

BTG as a Discovery Tool

The BTG program's most underexploited function is not revenue generation, it is education. Every glass pour is a controlled, low-risk opportunity for a guest to encounter a wine they would not have chosen from a full bottle list and at a fraction of the financial commitment.

The Discovery Arc

Sophisticated wine programs understand that guest wine loyalty is built in stages. A guest who arrives as a reflexive Cabernet drinker does not become a Barolo enthusiast by reading a wine list. They become one through a sequence of guided encounters that expand their reference points incrementally.

The BTG program is the mechanism for those encounters because it removes the commitment barrier. A guest who would never order a $75 bottle of Grüner Veltliner might order a $16 glass if a server can articulate what makes it interesting in relation to a Chardonnay they already enjoy. The discovery happens at the glass; the bottle purchase follows in future visits.

This is the reason why the BTG list should contain at least one or two selections that will be unfamiliar to most guests (not to confuse them, but to give the service team an opening to teach. The server who can say "have you had Txakoli before? It's the wine they drink in San Sebastián with pintxos) bone dry, slightly spritzy, very different from anything else on the list" has a story to tell. Stories sell wine.

BTG as Upsell Architecture

The most direct upsell path from glass to bottle is a BTG program designed with that conversion in mind. The selection that a guest orders by the glass should always have a corresponding full bottle available. If a guest finishes their first glass and leans in, the conversation is "I'm so glad you liked that, this is actually available by the bottle and it only gets better through the course of dinner."

Practical structures that support glass-to-bottle conversion:

  • Half-bottle pairings: Offer 375ml bottles of BTG selections where producers make them available. This bridges the gap between a $16 glass and a $75 full bottle for a couple.
  • Producer-breadth strategy: When a BTG selection succeeds with a guest, having additional wines from the same producer on the full bottle list creates a natural next step in the discovery arc.
  • Flight programs: Three to four 2–3 oz pours of related selections (e.g., "Three Expressions of Pinot Noir" or "The Whites of Northern Italy") are among the highest-margin items on any list and the most powerful education vehicle. Each flight pour is a potential full-glass sale or bottle conversion.

The Program as Narrative

The most sophisticated BTG programs tell a story that guests can follow across visits. This requires intentionality: not just what is poured but why, and how each selection connects to the others.

A beverage director who can explain "we built our BTG list around wines that are each a best-in-class expression of a specific terroir, this Cru Beaujolais, this Sancerre Rouge, this Etna Rosso, so that every glass you order here is something you're unlikely to find by the glass anywhere else in this city" has given their team a sales tool and their guests a reason to return.

The BTG program is also the primary vehicle for seasonal storytelling. Rotating one or two selections with the season (moving to a côtes du Rhône blanc in summer, a Priorat in autumn) gives regular guests a reason to re-engage and creates a sense of program vitality. Wine programs that never change feel stagnant. Programs that evolve feel curated.

Measuring Guest Engagement

Concrete metrics to track BTG as a discovery and loyalty vehicle:

  • Return visit rate of BTG guests vs. non-wine guests: Guest management data consistently shows that guests who engage meaningfully with a wine program (ordering multiple glasses, trying server recommendations, asking questions) have higher return visit rates. This is a relationship, not a transaction.
  • BTG-to-bottle conversion rate by selection: Track this quarterly. Top-converting selections should be anchored and celebrated; zero-converting selections should be evaluated for replacement or positioning adjustment.
  • Average glasses per cover: A baseline metric for BTG program health. Rising average means guests are engaging more deeply. Flat or falling average means something is broken, the list, the team's selling skills, or the value perception of the pours.
Pro Tip: Give every BTG selection a one-sentence server story, not a tasting note, but a provenance story.
