Twenty-four months in 100% new oak, yet you'd never know it, the wood is fully absorbed, leaving a composed nose of red cherry, cedar and wild mint with a faint graphite undercurrent. On the palate, this is a leaner, more poised Paul Sauer than recent releases: medium-bodied, with supple tannins and a light dusting of spice that carries through to a long, harmonious finish.
