Chamomile and crushed herbs cut through immediately, precise and unwavering. The acidity is the spine of this wine, razor-edged, tightly coiled, arriving before any fruit has a chance to speak. What follows is mineral and herbal rather than generous: wet limestone, yarrow, a whisper of white pepper, and a salinity that feels pulled straight from the soil. Bone dry and intensely concentrated, the finish lingers cool and austere, more tisane than fruit bowl. Extraordinary restraint.
