Whole-bunch-pressed and raised across cement eggs, amphorae, foudres and used barrels, with fermentation stretching anywhere from three weeks to eleven months and twelve months on the lees. The nose is generous and precise — honeysuckle, white peach, orange peel and a faint thread of white chocolate, everything in its right place. On the palate it's medium-bodied and bright, citrus peel and lime zest giving way to stem ginger and orange oil, the finish fanning wide with real energy and clarity. Another outstanding Cartology from Chris Alheit.
