Watervale's limestone backbone shows beautifully here. Crushed stone and wet slate anchor flavors of lime blossom and quince paste. The texture has real grip, almost chalky, with white pepper and dried herbs threading through the concentrated finish. Serious mineral-driven Riesling that needs time.
