Salon 2007

Lemon curd, crushed chalk, white peach and a whisper of toasted brioche, the 2007 Salon is precise and tightly wound, with fine bubbles carrying everything along on a taut, focused line. Less imposing than the muscular 2006, it leans toward elegance, though there's a coiled tension here that signals it still hasn't fully arrived. Give it time; the aristocratic bones are unmistakable.
