Patrick Piuze

History

Patrick Piuze was born in Quebec and arrived in Burgundy in the late 1990s, working harvests and cellar rotations before landing at Domaine Raveneau, where he spent several years absorbing one of Chablis's most rigorous approaches to the appellation. That apprenticeship left a clear mark. He founded his own négociant house in 2008, sourcing fruit and, in some cases, working directly with growers over long-term contracts that give him meaningful influence over viticulture. The operation is small and deliberately so. Piuze has built a range structured around the idea that individual lieux-dits and premier cru sub-parcels deserve separate vinification rather than blending into broader appellation categories. That thinking aligns him with a handful of producers, most of them domaines rather than négociants, who treat Chablis with the same parcel-level seriousness applied to the Côte de Nuits.

Vineyards

Piuze draws from sites across the appellation, including premier crus Vaillons, Les Butteaux, Les Séchets, and Vaulorent, and grand crus Les Clos and Les Preuses. His village-level wines, labeled under the Terroir de series, identify specific communes rather than collapsing everything into a generic Chablis designation. Terroir de Fyé and Terroir de Chichée are two examples, each pointing to a distinct geological and topographical context on either side of the Serein river. The soils throughout are Kimmeridgian limestone and clay, the benchmark substrate of the appellation, though aspect and elevation shift considerably between the right-bank grand cru slope and the more varied premier cru hillsides. Specific hectarage and farming certifications for his sourced vineyards are not consistently documented in public record.

Winemaking

Fermentation takes place in a combination of stainless steel tanks and older oak, with the balance between the two varying by site and vintage. Piuze has spoken about wanting the vessel to recede and the vineyard to speak, which in practice means limited new oak and extended aging on fine lees before bottling. The wines tend to show a taut, mineral profile with restrained fruit and good acidity, consistent with the 2022 vintage's generous but structured character. Fining and filtration practices are not extensively documented, though the wines in bottle read clean without appearing stripped. The grand crus, particularly Les Clos, are bottled with additional aging and represent the clearest argument for his approach: wines that reward patience and reward attention to their origin.
