### History The domaine was established by Hubert Lamy in the village of Saint-Aubin, where the family had farmed for generations. Hubert assembled holdings across Saint-Aubin's premier cru lieux-dits at a time when the appellation attracted little outside attention, which allowed him to acquire exceptional parcels at a fraction of the cost of neighboring Puligny and Chassagne. His son Olivier took over winemaking responsibilities in the 1990s and has driven the domaine's transformation into one of the most closely watched addresses in the Côte de Beaune. Olivier's approach, marked by unusually high planting densities and a willingness to work outside Saint-Aubin's shadow, drew the attention of importers and critics who had largely overlooked the appellation. Today the domaine is managed by Olivier with involvement from the next generation, and the range extends well beyond its Saint-Aubin base into Puligny-Montrachet, Chassagne-Montrachet, and Grand Cru holdings including Criots-Bâtard-Montrachet.
### Vineyards The domaine's core holdings are in Saint-Aubin, an appellation that sits at higher elevation than Puligny and Chassagne, with a cooler, later-ripening character and soils that tend toward limestone and clay over a hard rock base. Key premier cru parcels include En Remilly, which borders the Montrachet hillside directly, Les Murgers des Dents de Chien, Clos de la Chatenière, and Derrière Chez Edouard. Several of these are vinified under the "Haut Densité" designation, indicating blocks planted at significantly higher vine density than the Burgundy norm, a practice Olivier adopted to reduce individual vine vigor, lower yields naturally, and concentrate root systems deeper into the subsoil. The domaine also holds parcels in Chassagne-Montrachet, including the premier crus Les Chaumées and Les Macherelles, as well as Puligny-Montrachet Les Tremblots, also offered in a Haut Densité version. The Criots-Bâtard-Montrachet holding, while small, gives the domaine a Grand Cru anchor on the Chassagne side of the Bâtard hill. Farming is conducted sustainably with significant attention to vine age and soil health; the domaine has moved away from systemic treatments, though its precise certification status is not widely documented.
### Winemaking Olivier Lamy ferments in barrel using indigenous yeasts, with whole-cluster pressing preceding barrel transfer for alcoholic fermentation. The oak regime is restrained relative to the Côte de Beaune's historical norms: a high proportion of the wood is older, and the percentage of new oak applied even to premier and Grand Cru wines is deliberately modest, keeping the wines' texture and site character in the foreground rather than wood influence. Élevage runs for roughly twelve months before bottling, and the wines are typically bottled without heavy fining or filtration. The Haut Densité bottlings, produced from the densely planted parcels, tend to show a tighter, more mineral profile in youth and are regarded as the domaine's most age-worthy expressions. Across the range, the house style leans toward precision and freshness rather than weight, a reflection of both Saint-Aubin's cooler conditions and deliberate choices in the cellar to preserve acidity and avoid overworked textures.
