History
Clos du Mont-Olivet has been in the Sabon family for multiple generations, with roots in Châteauneuf-du-Pape stretching back to the early twentieth century. The domaine takes its name from the Mont-Olivet lieu-dit, one of the appellation's recognized named sites. For much of its history the estate sold wine in bulk to négociants, as was common across the southern Rhône, before shifting toward estate bottling and building a direct identity around its own label. The Sabon family has continued to run the property without outside investment or corporate ownership, passing the work from one generation to the next with relatively little disruption to the domaine's overall style or direction. La Cuvée du Papet, named in honor of an elder of the family, became the flagship bottling and the wine by which most critics and collectors have come to know the estate.
Vineyards
The domaine holds parcels across several of the appellation's distinct soil types, including the large rounded galets roulés that cover much of the plateau, as well as sandier and more clay-rich zones lower in the appellation. Mont-Olivet itself sits in the northeastern sector of Châteauneuf-du-Pape, where soils tend toward a mix of clay and limestone with varying stone cover. Grenache dominates the plantings, as it does across most of the appellation, with supporting roles for Syrah, Mourvèdre, and other permitted varieties. The white wines draw on Clairette, Bourboulenc, and related grapes. Vine age is a consistent talking point for the domaine, particularly for La Cuvée du Papet, where old parcels contribute concentration and structural depth. Specific farming certification details are not well documented in widely available sources, and the domaine has not prominently publicized organic or biodynamic conversion.
Winemaking
The approach in the cellar is broadly traditional for the appellation. Reds are typically fermented with a significant proportion of whole clusters, a practice that has long been associated with the Sabon style and contributes to the tannic structure and aromatic complexity that characterizes their better bottles. Aging takes place in large old oak foudres rather than small barriques, which means oak influence on the finished wine is minimal; the fruit and structure carry the wine rather than wood character. La Cuvée du Papet spends an extended period in foudre relative to the domaine's standard red, and is drawn from the oldest vine parcels. The whites, which have attracted increasing attention in recent vintages, are handled to preserve freshness, though specifics of temperature control or lees contact protocols are not extensively documented. Filtration practice is not prominently disclosed. The domaine does not produce a second label in the conventional sense; the hierarchy runs from the appellation-level red and white to La Cuvée du Papet at the top.
