History

Bindi was established by the Dhillon family in the Macedon Ranges, working vineyards that sit at elevations rarely attempted for viticulture in Victoria. Michael Dhillon has been the central figure in shaping the estate's direction and reputation, with the operation remaining firmly family-owned and tightly focused in its output. The producer developed its name quietly, without the promotional machinery that elevated many Australian estates during the 1990s and 2000s, building instead on the consistency and character of its wines over successive vintages. That restraint in scale and ambition has become something of a defining characteristic. Bindi makes very little wine relative to its reputation, and release quantities across its vineyard-designated bottles remain small.

Vineyards

The vineyards sit in the Macedon Ranges at significant altitude by Australian standards, where the growing season is long and cool and ripening is rarely assured in difficult years. The region is one of the coldest in Victoria, subject to sharp diurnal swings that preserve acidity and slow phenolic development. Bindi's sites include the Original Vineyard, which represents the estate's oldest plantings and serves as the source for what is arguably its most historically significant Pinot Noir. Block 5 is a distinct parcel within the estate, typically producing a more concentrated and structured expression. The Kaye vineyard is a separate site, and the Dixon designation draws on fruit from a specific block with its own character. The Chardonnay program is anchored by Quartz and Kostas Rind, two vineyard-designated wines that reflect different soil and aspect conditions across the property. Soils in the Macedon Ranges are generally granitic and free-draining. Precise farming certification details for Bindi are not widely documented, though the estate is understood to farm with care for site preservation.

Winemaking

Michael Dhillon makes wines that lean toward restraint and precision rather than weight or immediate approachability. The Chardonnays are made in a style that prioritizes line and tension, with oak used as a structural element rather than a flavour driver. The Pinot Noirs, across all designations, tend toward fine tannin and savoury depth, with the Block 5 typically showing the greatest concentration and the Original Vineyard offering a more complete picture of the estate over time. Native yeast fermentation is consistent with the producer's broader philosophy, and the wines are not made for early drinking, particularly at the single-vineyard tier. The Dixon wines, appearing across both Pinot Noir and, in earlier releases, Chardonnay, represent a level of selection and specificity that places them among the producer's most serious bottles. Aging regimes are moderate and the wines do not rely on new oak for structure.
