Billaud-Simon is one of Chablis's most respected domaines, with holdings across several Premier and Grand Cru sites. The wines are lean, precise, and built for the cellar.


History

Billaud-Simon has its roots in Chablis itself, the family having farmed the appellation for generations before the domaine took its current form in the twentieth century. For many years it operated as a family estate under the Billaud name, building a reputation for straight-edged, uncompromising Chablis at a time when many producers were leaning toward more interventionist styles. In 2014, the domaine was acquired by Faiveley, the Burgundy négociant house based in Nuits-Saint-Georges. The transition prompted some concern among followers of the estate, given Faiveley's scale relative to Billaud-Simon's artisanal standing, but the wines have continued to reflect the house's historically austere character. The original family vineyards were retained, and the winemaking philosophy has remained largely intact under the new ownership structure.

Vineyards

Billaud-Simon holds parcels in some of the most coveted sites in Chablis, including Grand Cru vineyards Les Preuses, Vaudésir, and Les Clos, as well as Premier Cru sites Montée de Tonnerre and Mont de Milieu. The soils throughout are Kimmeridgian limestone and clay, the characteristic bedrock of the appellation's finest vineyards, with its dense fossil content of small oyster shells. Montée de Tonnerre, consistently one of the appellation's top Premier Crus, faces southeast and benefits from good sun exposure on its upper slopes. Les Clos, the largest and arguably most prestigious of the Grands Crus, faces southwest across the Serein valley. Farming practices at the domaine have not been formally documented under organic or biodynamic certification, though the estate has shown interest in reducing chemical inputs in the vineyard.

Winemaking

The style at Billaud-Simon is defined by restraint. Fermentation takes place primarily in stainless steel, preserving the naturally high acidity and mineral cut that Chablis is built around. Oak use has historically been minimal or absent for the appellation and village-level wines, with larger formats occasionally used for the Grands Crus without any intention of adding overt wood character. The result is wines that read as cool, linear, and often quite reductive in youth, requiring time in bottle to open fully. The Tête d'Or, a lieu-dit selection from old vines within the Chablis appellation, sits above standard village level in terms of concentration and structure. The Grands Crus, particularly Les Preuses and Les Clos, reward patience of five years or more and can develop considerable complexity over a decade.
